(Palak) Spinach Pasta

Here is a short story of Popeye and Pasta.  One day, I was narrating the popeye's story to a Lil one, a niece of mine.  About Popeye the sailor and how he always carried a handy can of spinach which gave him the superhuman strength. I added my own version of the story here, as to how popeye turned into a superhero and conquered the world.   The Lil one was so intrigued by the idea of becoming a superhuman and I was close to succeeding in including green in her diet. Becoming a superhero is the supercool wannabe of the new age children when they adult. I have heard this from a handful of kids, that they want to be superman, spiderman, iron man, and all the marvel characters they know.  The topic drifted away from Popeye and spinach towards Captain America. After talking about the marvels for 10 mins (what seemed to be like hours for me ), the Lil one was hungry and wanted Pasta for dinner. Period. And I dare not open up any Popeye story unless I am ready to ...

Vegan Mixed beans pancakes/adai

You must have heard of dosa. The indispensable south Indian breakfast.  Dosa is to a south Indian, the way pancakes are for the west. It is the Indian version of pancakes or a crepe. It is generally made with lentil and rice mix soaked overnight, grind to a batter, fermented naturally, and used.  Now the world is after fast food, dosa batter can be made instantly too.  This post is definitely not about the traditional dosa or the instant ones.  So last week, I went to my cousin's place here. She was making dosa for breakfast and intending to help I took over the dosa making job from her and mindlessly making it.  After making a couple of ones, I noticed the batter looked way different than what I used to make. She explained to me, it is a mix of rice and a mix of lentils like split pigeon peas, mung beans, etc. And that is her way of feeding nutrients to her little one who is always after dosa mum mum 3 times a day * 365.  Thanks to her for the ...

No oil Veg balls in manchurian sauce

A Girl in the states! In the new year of 2018,  I moved to States with a lot of hopes and dreams of making it big here. With Jan 01, 2019, marking the completion of year here in states, a lot has happened indeed. It's a year of staying away from family and friends. It's a year of being an alien or officially a resident alien. It's a year of befriending new people and hosting parties. And it's a year of self-cooking. It's not like, I never know the ABC of cooking. I did know some basics all along. But I have never cooked a complete meal all by myself. I have assisted mom at times. I  have some ready-made noodles and stuff. It is in 2018, I have learned to cook literally anything. Yea, Practice makes a man perfect. Am still practicing :)  So until a year ago, I used to eat out a lot and every-time I go out, without even looking at the menu, I will order Manchurian... cauliflower(gobi) Manchurian, paneer Manchurian, mix veg Manchurian and the list goes....

Flat Bread vegetable stir fry - chapathi kothu fry

Chapathi - the instant and healthy flatbread is a healthy option of bread as you all might already know. It is a perfect bread if you are a vegan since it uses no milk products or eggs and what is even good is it uses no oil. Trust me, you need oil neither for kneading nor for making it. And the very thing I like about it is , you can make it a flat pan and don't have to wait for that oven cooking time. It hardly takes a couple of minutes to make a single bread. 2 or 3 pieces of bread will be enough for a person depending upon how big you can make it(not really, it depends on the circumference of your pan :D ) And the list goes on...... I know, that's good news after good news right !!!  Well, this is definitely not the post about how to make chapati/flatbread. Yea, not today... If there is one habit, I want to get rid off for good is procrastinating....: E  This post is about what to do with leftover chapati/flatbreads. Today, I woke up and had 2 slices of ...
