Flat Bread vegetable stir fry - chapathi kothu fry

Chapathi - the instant and healthy flatbread is a healthy option of bread as you all might already know. It is a perfect bread if you are a vegan since it uses no milk products or eggs and what is even good is it uses no oil. Trust me, you need oil neither for kneading nor for making it. And the very thing I like about it is , you can make it a flat pan and don't have to wait for that oven cooking time. It hardly takes a couple of minutes to make a single bread. 2 or 3 pieces of bread will be enough for a person depending upon how big you can make it(not really, it depends on the circumference of your pan :D )

And the list goes on...... I know, that's good news after good news right !!! 

Well, this is definitely not the post about how to make chapati/flatbread.
Yea, not today... If there is one habit, I want to get rid off for good is procrastinating....: E 

This post is about what to do with leftover chapati/flatbreads.

Today, I woke up and had 2 slices of bread leftover from last night's dinner. I did not want to waste them and I was lazy to make another breakfast and a side for the leftover bread. But 2 slices of bread! Will that be enough for 2 hungry stomachs??? NO.... or wait MAY BE YESS...

You don't have flatbreads, fret not, you can make this dish with any type of bread. 

Okay stories aside, lets jump on to see what I made out of the leftover bread that feeds myself and my partner in food.  

Ingredients :

  1.  Leftover/fresh flatbread/chapati/bread/naan - basically any type of bread - 2 or 3 
  2.  onions, tomato - 1 each (medium size) 
  3.  Vegetables of choice - cut into small pieces - 1 cup ( I have used peas, corn, capsicum) 
  4.  Chilli pepper - 1 or 2 (optional)
  5.  Curry powder - a tsp or (chilli powder - 1/8 tsp and spice powder(garam masala) - 1/4 tsp ) -
  6.  Cilantro or any herbs of your choice - a handful - optional 
  7.  oil - 1 tbsp 
  8. salt - a tsp or as per your taste/likings 

Instructions : 

  1. Cut the bread into strips or small chunks and cut the onion, tomato, and veg into small pieces to match the size the corn 
  2. Heat the wok/pan with the oil in medium heat 
  3. Add onion, tomato, chili pepper, and saute for a min.
  4. Now add in the vegetable mix and cook for 2 mins.
  5. Add in the salt and spices mentioned. You can totally skip the spice and just add salt and turmeric powder alone too. 
  6.  Add the bread pieces now and sprinkle some water 
  7. If you are vegan, you can switch off the stove/induction and mix it to let it cook in the retained heat.
  8.  If you are not, you can add an egg and mix it and cook for a minute more. 
  9.  Garnish with cilantro or a herb of your choice.
  10.  This goes well with yogurt as a side.
