(Palak) Spinach Pasta

Here is a short story of Popeye and Pasta.

One day, I was narrating the popeye's story to a Lil one, a niece of mine.  About Popeye the sailor and how he always carried a handy can of spinach which gave him the superhuman strength. I added my own version of the story here, as to how popeye turned into a superhero and conquered the world.   The Lil one was so intrigued by the idea of becoming a superhuman and I was close to succeeding in including green in her diet. Becoming a superhero is the supercool wannabe of the new age children when they adult. I have heard this from a handful of kids, that they want to be superman, spiderman, iron man, and all the marvel characters they know.  The topic drifted away from Popeye and spinach towards Captain America. After talking about the marvels for 10 mins (what seemed to be like hours for me ), the Lil one was hungry and wanted Pasta for dinner. Period.

And I dare not open up any Popeye story unless I am ready to clog my already overflowing mind with all the marvel characters.  Or I better not story tell again.

Finally, I gathered myself to make pasta for dinner. (3rd time in a row). When I entered the kitchen, the spinach, which I earlier bought in the hopes of making palak paneer and paratha, rang a bell in my head. 30 minutes later, I ended up making palak pasta. Both my niece and I had our dinner happily. She had her pasta. And I had my spinach. It was a win-win for both of us.

Read further for the recipe. I have made a separate post on making palak pesto sauce for pasta. Please follow the link in the ingredient section for making the spinach sauce.

Ingredients :

  • Palak Pesto or the Popeye Pesto sauce - 3-4 tbsp or as required.
  • Pasta - 1 cup.
  • Salt - 1 tsp or as per taste
  • Oil - 1 tbsp or as required.
  • Water - 3 cups.
  • Cream - 1 tbsp -optional
  • Pepper - as required

Instructions :

  • Boil water in a saucepan.
  • Add a bit of oil and salt
  • When the water comes to a boil, add the pasta and cook it for 5-6 mins. Please follow the timing instruction as per the pasta type(usually given in the package)
  • Once the pasta is cooked, strain the water and keep it aside.
  • Heat a wok and add oil in it. (I have used vegetable oil for this spinach pasta as I did not like the taste of olive oil and spinach together. But any type of oil can be added as per your taste).
  • Add the cooked pasta and add the already made spinach sauce on top of it and give it a stir.
  • Add salt and pepper as required and give it a nice mix.
  • Adding cream or veggies is totally optional to enhance the taste of the spinach pasta.

The popeye's pasta is so ready to be enjoyed.
