Squash Spaghetti

Spaghetti squash resembles spaghetti strands when cooked and hence the name. It is low in calories and nutrient-filled. If you are on a low-calorie diet and still crave pasta, this is a quick fix.

Here is the recipe for 2 servings

Ingredients :

  1. spaghetti squash -1 small/medium 
  2. olive oil - 1/2 tbsp 
  3. garlic - 1 minced
  4. tomato sauce(pasta sauce) - 16 oz 
  5. cherry tomatoes - 4 in no 
  6. black pepper - as needed
  7. salt  - as needed
  8. herbs - fresh/dried. (basil)
  9. red pepper flakes  - as needed
  10. shredded mozzarella cheese - optional 

Instructions :

  1. Preheat over to 350° F 
  2. Halve the squash, rub olive oil and salt in both the pieces, and slid it inside the oven.
  3. Bake it for an hour or until it becomes tender.
  4. Take out the squash and let it cool for some time.
  5. Meanwhile, in medium heat, heat oil in a saucepan.
  6. Add minced garlic and cook for a minute or two.
  7. Now add the pepper flakes, salt, cherry tomatoes, and sauce and simmer it briefly.
  8. Take a fork, scrape the flesh from the squash from outside to inside strokes. 
  9. Add the squash strands to the sauce and remove from heat.
  10. Add the pepper, cheese, and herbs as per your likings.

Variations 

Instead of tomato sauce, you can use meatballs curry, vegetable balls curry, or even basil pesto.
