Golden Yellow Lemon Fried Rice

Lemon and its flavor is something I will never get tired of.
Here is a recipe for everyone who likes to eat rice;  This is a pretty simple recipe to make.
This can be made with the leftover rice and no need to waste any leftovers
My 3-year-old niece here in the US asks for Lemon rice as Lunch every single day. Trust me it is true and she never get bored, ever since it was introduced to her.
Well here is the recipe

Serves :2

Ingredients :

  • Lemon -2 in no (Juiced without seeds)
  • onion - 1(small)
  • chilli - 2
  • bell pepper - 1 (small)
  • cilantro
  • split chickpea - 1 tbsp
  • cashews/peanut - 1 tbsp
  • salt, turmeric - 1 tsp each
  • Oil - 1 tbsp
  • Rice - 1 cup cooked

Instructions:

  • Heat a wok or a pan with some oil
  • Add in the chickpea, cashew/peanuts.
  • Once the chickpea changes its color, add in onions and fry for a minute or two.
  • Add in the Lemon juice and once it boils, add the rice, stirs fry for a minute.
  • Switch off the stove and mix it completely and garnish with some cilantro or any herbs of your choice.

I have added cashew here since I ran out of peanuts. But peanuts give add rich crunchy taste to this.
I made some pan-fried potatoes as sides for the lemon fried rice, the recipe of which I will post separately.
